Sean tells me I have been completely remiss in my duty to keep the blog updated. He's been harassing me for the last couple of weeks to get something posted. As it has been over a month now since the last update I decided that he was probably right, so here I am.
We continue very busy. Of course, with an almost 2 year old, how could we not? Ethan continues to grow by leaps and bounds, everyday bringing something new. A new ability, a new interest, a new word... we are in a whole "new" world. Thankfully, for my own sanity, some things have remained the same. He still loves "his" kitty, although I am not sure that she is as excited about this as he is:

He loves most anything that makes lots of noise, typically when he can push a button and walk away and it is still talking (usually driving mommy and daddy insane)... the kiddie laptop is the prime culprit (which completely our fault), his leap pad talking book is the other
He still loves to do things that make both his parents stop and think, my child is strange (I know, I know... the apple doesn't fall far from the tree). I'm still not really sure what he was trying to do... I just knew it was a kodak moment. Think of all the great pictures I will be able to show his girlfriends some day :)
New Favorite Recipe
My wonderful friend Leanna is an amazing cook who creates spectacular meals. Over the next few weeks I will be sharing some of her tasty creations.
Harry's Pub Pizza Bread

Ingredients:
1 package 3.5 ounces) pepperoni slices
1 can (3.25 ounces) sliced ripe olives
1 can (3.25 ounces) sliced mushrooms (optional)
2 tablespoons snipped fresh parsley (or dried parsley)
1/2 cup (2 ounces) shredded mozzarella cheese
2 tbsp all-purpose flour (this is a must)
1 garlic cloves, pressed
2 packages (11 ounces each) refrigerated French bread dough
1 teaspoon Italian Seasoning
2 tbsp (1/2 ounce) grated fresh Parmesan cheese
1 can (15 ounces) pizza sauce, warmed (optional)
Dice or cut the pepperoni slices into smaller strips. Drain the olive slices and the mushrooms, and put into bowl, add the pepperoni and/or other meats. Add parsley, Italian seasoning, Mozzarella, and Parmesan. Press the clove of garlic and mix together well.
On a cutting board, lay out waxed paper, sprinkle with flour (this really, really is a must.) Take the French bread dough, seam side up, and slice open, half way (do not cut all the way through.) With rolling pin, roll out the dough width-wise to create a well. Transfer to lightly greased cookie sheet.
Spoon on pizza sauce (I used regular spaghetti sauce...) add half the mixture to each French bread "well." Extra sauce can be then used as a dipping sauce. Bake at 375 degrees for 20-30 minutes.
