Have I mentioned that I have one of the most AWESOME friends ever? My friend Brandy is a professional photographer in Salem, Or... please check her out her website McCloud Photography and her Blog. We have been blessed to have her photograph some of our most special events (our wedding & Ethan's bris) and doubly blessed when she married her husband Justin who we just love and are so grateful to count him as part of our extended family as well.
We usually get lucky enough that we get some impromptu family photo sessions when we are visiting them. A definite perk when you have a photographer in the family... the downside is that as friends we automatically become test subjects for new things she wants to try (which, can involve tight places or wading in the cold creek to sit on a dirty rock... and always involves lots laughing, needless to say we always have a great time and everything turns out great!) and that as friends it sometimes takes a little while before we get our pictures... however, it is always worth the wait... and bless her, Brandy is always patient with my impatient self. Needless to say, I was quite excited this morning when I had e-mail saying my pictures were ready to see. These are from our last visit in August at the outdoor amphitheater in Independence, OR. I just love Ethan with his sunglasses... he thought he was so cool with them on upside down!

Harry's Pub Pizza Bread

Ingredients:
1 package 3.5 ounces) pepperoni slices
1 can (3.25 ounces) sliced ripe olives
1 can (3.25 ounces) sliced mushrooms (optional)
2 tablespoons snipped fresh parsley (or dried parsley)
1/2 cup (2 ounces) shredded mozzarella cheese
2 tbsp all-purpose flour (this is a must)
1 garlic cloves, pressed
2 packages (11 ounces each) refrigerated French bread dough
1 teaspoon Italian Seasoning
2 tbsp (1/2 ounce) grated fresh Parmesan cheese
1 can (15 ounces) pizza sauce, warmed (optional)
Dice or cut the pepperoni slices into smaller strips. Drain the olive slices and the mushrooms, and put into bowl, add the pepperoni and/or other meats. Add parsley, Italian seasoning, Mozzarella, and Parmesan. Press the clove of garlic and mix together well.
On a cutting board, lay out waxed paper, sprinkle with flour (this really, really is a must.) Take the French bread dough, seam side up, and slice open, half way (do not cut all the way through.) With rolling pin, roll out the dough width-wise to create a well. Transfer to lightly greased cookie sheet.
Spoon on pizza sauce (I used regular spaghetti sauce...) add half the mixture to each French bread "well." Extra sauce can be then used as a dipping sauce. Bake at 375 degrees for 20-30 minutes.
