Sunday dawned cold and after a wonderful breakfast with Grandpa it was time to travel up the coast. We traveled most of the day in the rain, but made it to our destination with no problems. We had a great dinner with my parents in Lincoln City... sorry, no pictures. After a couple hours with them it was time for mom to head to work, Phillip to head home, and for us to get settled into our rooms.

Monday started a bit cloudy and chilly, but turned into a beautiful day. Grandma came over to spend the day so we decided to head over to the Aquarium where they have a new glass exhibit... it was really cool to see. Ethan loved the fish and animals. He really enjoys reaching in the water to touch things... which means one of us is holding onto him for dear life to keep him from diving in head first.
After Grandma headed home we spent the rest of the day relaxing and, of course, taking more pictures of the ocean... this time it was the sunset.

My wonderful friend Leanna is an amazing cook who creates spectacular meals. Over the next few weeks I will be sharing some of her tasty creations.
Harry's Pub Pizza Bread

Ingredients:
1 package 3.5 ounces) pepperoni slices
1 can (3.25 ounces) sliced ripe olives
1 can (3.25 ounces) sliced mushrooms (optional)
2 tablespoons snipped fresh parsley (or dried parsley)
1/2 cup (2 ounces) shredded mozzarella cheese
2 tbsp all-purpose flour (this is a must)
1 garlic cloves, pressed
2 packages (11 ounces each) refrigerated French bread dough
1 teaspoon Italian Seasoning
2 tbsp (1/2 ounce) grated fresh Parmesan cheese
1 can (15 ounces) pizza sauce, warmed (optional)
Dice or cut the pepperoni slices into smaller strips. Drain the olive slices and the mushrooms, and put into bowl, add the pepperoni and/or other meats. Add parsley, Italian seasoning, Mozzarella, and Parmesan. Press the clove of garlic and mix together well.
On a cutting board, lay out waxed paper, sprinkle with flour (this really, really is a must.) Take the French bread dough, seam side up, and slice open, half way (do not cut all the way through.) With rolling pin, roll out the dough width-wise to create a well. Transfer to lightly greased cookie sheet.
Spoon on pizza sauce (I used regular spaghetti sauce...) add half the mixture to each French bread "well." Extra sauce can be then used as a dipping sauce. Bake at 375 degrees for 20-30 minutes.
