I've gotten a little behind trying to get this finished... stupid life had to jump in there and interrupt things :) This morning I've got some quiet time to try to get a little farther.
Wednesday was pretty quiet. We did a little shopping at the outlet and hung out at the resort. Our friends Brandy and Justin (who can be seen here or here ) came over and visited for several hours. Justin opened his gift from us... his fabulous Southern Oregon University football shirt!!! I might add that Justin played football for Western Oregon University... however he is out numbered by Brandy, Sean, and I. He was a good sport and accepted his gift in good humor.
Thursday was a great day. We went to the Hatfield Science Center to watch the octopus feeding. It was by far one of the coolest things I have ever seen. It doesn't hurt that this was the first time I have actually seen an octopus moving around. Every other time I have seen one it is usually curled up in a cave or corner somewhere. Harry's Pub Pizza Bread

Ingredients:
1 package 3.5 ounces) pepperoni slices
1 can (3.25 ounces) sliced ripe olives
1 can (3.25 ounces) sliced mushrooms (optional)
2 tablespoons snipped fresh parsley (or dried parsley)
1/2 cup (2 ounces) shredded mozzarella cheese
2 tbsp all-purpose flour (this is a must)
1 garlic cloves, pressed
2 packages (11 ounces each) refrigerated French bread dough
1 teaspoon Italian Seasoning
2 tbsp (1/2 ounce) grated fresh Parmesan cheese
1 can (15 ounces) pizza sauce, warmed (optional)
Dice or cut the pepperoni slices into smaller strips. Drain the olive slices and the mushrooms, and put into bowl, add the pepperoni and/or other meats. Add parsley, Italian seasoning, Mozzarella, and Parmesan. Press the clove of garlic and mix together well.
On a cutting board, lay out waxed paper, sprinkle with flour (this really, really is a must.) Take the French bread dough, seam side up, and slice open, half way (do not cut all the way through.) With rolling pin, roll out the dough width-wise to create a well. Transfer to lightly greased cookie sheet.
Spoon on pizza sauce (I used regular spaghetti sauce...) add half the mixture to each French bread "well." Extra sauce can be then used as a dipping sauce. Bake at 375 degrees for 20-30 minutes.
